Oh, there’s so much to love about casseroles!

First up, they’re simple to make. You just need some basics, like onion and/or garlic, a bunch of veggies, and if you like, some carbs, like rice or pasta. Secondly, they’re easy to cook and to serve, since essentially, a casserole is just any food that is cooked and served in the same dish. Thirdly, they’re filling as heck – the perfect comfort food on a cold or depressing day. And finally, if you happen to have any leftovers, they’re usually easy to freeze.

We often think of casseroles as being full of cream and cheese, and while this may be the case for some of the vegan casserole recipes below (veganified, of course!), there are also lighter versions I’ve included that are mainly just veggies.

Another casserole misconception is that they’re always savoury. Nope! There are plenty of deliciously warm, sweeter versions of casseroles that you can serve up for breakfast, brunch or dessert – I’ve included a few ideas below.

It’s hot, sticky, and sweet. And drizzled with some maple syrup, this makes the perfect breakfast or brunch dish!

This dish is a great way to start the day. It’s vegan, gluten-free and mildly sweet with a pudding-like consistency under a crispy topping. Plus, casseroles are great for breakfast because you do all the work the night before. In the morning you just pop them into the toaster oven and enjoy! Before going vegan, I always found myself sluggish and bloated after eating lasagne. But this dairy-free recipe feels so much lighter on the tummy, and is super easy to make with simple ingredients. It’s full of Mediterranean flavours and has loads of nutrients, too.
