Once the cook time is up let the pressure cooker sit for a further 15 minutes to allow the pressure to drop before opening the steam release valve and then opening the lid. Check to see if the meat is tender and fully cooked, if not put the lid back on and cook for a few more minutes.

Pour out all the cooking liquid except for about a cup, or use water if you prefer. Place the trivet that came with your Instant Pot (or use a metal steamer basket) and add the potatoes, carrots, and cabbage and close the lid, or you can simply place the vegetables into the water.

Adjust your pressure cooker to cook for 3 minutes and then open the steam release vent right away and carefully open the lid. If they are not fully cooked put the lid on and cook for 1 more minute at pressure.

Ingredients

  • 3-4lbcorned beef brisket (with pickling spice packet)
  • 1largeonion, chopped
  • 4clovesgarlic, chopped
  • 4cupshot water
  • 1tspsalt
  • 1tsppepper

Vegetables to Serve

  • 1poundbaby potatoes
  • 1/2savoy cabbage, cut into wedges
  • 4large carrots, cut into 3-inch pieces

Instructions

Pressure Cooker Directions

  1. Add chopped onion, garlic, corned beef pickling spices, and 4 cups (1000mls) of water into your electric pressure cooker.

  2. Place the beef brisket on top of the onions, lock the lid, turn the steam release vent to 'sealing' and using the manual setting, adjust it to cook for 85 minutes for a 4lb brisket, 80 minutes for a 3lb brisket, and you can reduce the time further if it's smaller than that. NOTE– If your beef is thicker than 1.5 inches this may increase the cook time so add an additional 5 minutes then check and see if it's done when you take the lid off. If it's not done simply pressure cook it again for 5-10 more minutes.

  3. When the cook time time is up allow the unit to reduce pressure on its own without opening the steam release vent (Natural Release) for 15 minutes or until the pin drops, then open the steam release vent and carefully open the lid. If it's not fully cooked simply put the lid back on and cook a little longer.

  4. Take out brisket and wrap it in foil to keep warm.

  5. Pour out all the cooking liquid except for one cup, or if you prefer you can use water. Place the trivet that came with your Instant Pot (or use a metal steamer basket) and add the potatoes, carrots, and cabbage and close the lid. If you do not have a trivet simply add place the vegetables directly into the liquid.

  6. Adjust your pressure cooker to cook for 3 minutes and then open the steam release vent and carefully open the lid. If they are not fully cooked put the lid on and cook for 1 more minute.

  7. Slice the corned beef and serve hot with the vegetables.

Slow Cooker Directions

FAQs

What is the best and easiest way to cook corned beef? ›

The most common method for cooking corned beef and cabbage is boiling. Put the meat in a large pot, cover it with water or beef broth, add a seasoning packet and boil before lowering the heat to a simmer. Cook for 2 to 3 hours or until the meat is tender and cooked to your liking.

What happens if you don t rinse corned beef before cooking? ›

Many recipes don't include a step for rinsing the meat, but it's worth doing it anyway. Depending on the pickling solution used for the meat, you may be in for a saltier meal than you bargained for if you cook the meat without rinsing it. And don't worry: Rinsing won't make the beef taste bland!

Why is my corned beef tough from the pressure cooker? ›

You need to let the meat cool down for a few minutes after cooking, to give time for moisture to be reabsorbed, before releasing the pressure. Otherwise, the meat will likely be tough.

What is the secret to tender corned beef? ›

Slow-cooking corned beef is an effective way to achieve tender results with minimal hands-on time. Simply turn on the slow cooker in the morning, then go about your day without worry, leaving the house if need be, while your meat magically tenderizes.

Do you use the liquid in the corned beef package? ›

Place the brined corned beef in a large pot or Dutch oven along with the liquid and spices that accompanied it in the package. Pour in enough water to cover the beef, then bring the water to a boil on the stovetop. Reduce the heat to a simmer, and cover the pot.

Does corned beef get more tender the longer it is cooked? ›

Information. Corned beef is made from one of several less tender cuts of beef like the brisket, rump, or round. Therefore, it requires long, moist cooking. Corned beef is safe once the internal temperature has reached at least 145 °F, with a three minute rest time, but cooking it longer will make it fork-tender.

Do you cook corned beef fat side up or down? ›

Place brisket fat-side up. Barely cover the meat with water—about 1 inch—and keep the container covered throughout the cooking time. Allow about one hour per pound. OVEN COOKING BAG: Preheat the oven to 325 °F.

Does corned beef need to be in liquid in a slow cooker? ›

Brisket should always be cooked with some amount of liquid when placed in the crockpot since that's what transfers the heat to the meat. A brisket put dry in this kind of appliance will cook unevenly and may become unsafe to eat. For corned beef in particular, you need enough liquid to cover the entire piece of meat.

Does corned beef need to be submerged in water? ›

One of the keys to simmering corned beef correctly is the amount of water in the pot. When there's not ample liquid to cover the meat, your dreams of tender corned beef may be replaced by a tough, chewy result. Instead: Start by filling a large pot with enough water so the corned beef is completely submerged.

Why did my corned beef turn out rubbery? ›

Not cooking the meat long enough.

Cooking this beef is a process that can't be rushed. Even when the meat is cooked through, it needs more time to transform the chewy bite into one that's deliciously tender. Do this instead: To slice into the tender pieces of meat you expect, cooking corned beef takes patience.

What is the red liquid in corned beef package? ›

Blood is removed from beef during slaughter and only a small amount remains within the muscle tissue. Since beef is about 3/4 water, this natural moisture combined with protein is the source of the liquid in the package.

Which makes meat more tender, a pressure cooker or a slow cooker? ›

A slow cooker should be your go-to if you make a lot of soups or stews and want your meats fall-off-the-bone tender.

Why add beer to corned beef? ›

Most of the recipes I've seen for corned beef and cabbage don't include beer. However, since beer can be a powerful meat tenderizer and add more flavor, I don't know why you wouldn't use it.

What makes corned beef taste better? ›

You can also cover the meat with mustard or sprinkle it with brown sugar (or both) to add flavor and help the brown crust develop.

How long to boil 3 lb corned beef? ›

Place the corned beef in a stockpot. Add the spice packet and a bottle of dark beer. Bring to a boil, cover, and cook on a low simmer for about 2.5-3.5 hours, or 45-50 minutes per pound. When cooking is complete, remove from the liquid and let rest for 20 minutes.

Is it better to boil or bake corned beef? ›

The bottom line: If you're a traditionalist, go ahead and keep boiling away. But baked corned beef is definitely worth a try.

Is it better to cook corned beef in water or beer? ›

Seriously, don't forget the beer

Beer contains acids and tannins, which break down meat and tenderize it. It's the same idea as using citrus, wine, or vinegar in a marinade. In this case, Chapple uses two bottles of pale ale to braise the beef, combining it with onion, garlic, bay leaves, and 12 cups of water.

How do you keep corned beef moist? ›

One of the keys to simmering corned beef correctly is the amount of water in the pot. When there's not ample liquid to cover the meat, your dreams of tender corned beef may be replaced by a tough, chewy result. Instead: Start by filling a large pot with enough water so the corned beef is completely submerged.

Is it better to cook corned beef on stove or slow cooker? ›

Low and slow is the way you need to cook corned beef and what better way than in the slow cooker. Also known as corned silverside all you need to do is place all your ingredients in the bowl of the cooker, set it to low and go about with your day – to return to a fork tender, delicious dinner.
