Oats and honey are such wholesome foods and make the perfect base for a delicious and healthy-ish cookie. And what’s more, they are super simple to make. These hearty chewy delicious oat and honey cookies are perfect for a quick snack or with your cuppa tea.

These chewy oat cookies are delicious with a delicate hint of sweetness from the honey. And I find them especially delicious when paired with a nice cup ofloose-leaf herbal tea. Although to be fair, I find them very hard to resist and will pair them with just about anything. They are so morish that I often find myself eating the whole lot of them before they’ve cooled down. Which results in me needing to bake some more. So that the rest of the family can have some too. Do you also have this desire to devour all the biscuits and cookies that you bake?

How to make the oat and honey cookies

These cookies are so quick and easy to make that you will never have to be without a healthy tasty snack. All you will need to get started is a bowl and a wooden spoon. This recipe will yield 12 good sized cookies that are so delicious that you might just want to double the recipe.

Bake at 180 °C, 360 °F

Ingredients

Dry ingredients:

  • 75 gr flour (I used plain, but wholemeal can also be delicious)
  • 140 gr oats (I prefer to use old fashioned oats, but instant oats are also quite tasty)
  • 1/2 tsp baking powder

Wet ingredients:

  • 140 gr honey (you can also use golden syrup or maple syrup if you prefer)
  • 45 gr melted coconut oil (you can also some melted butter which is also delicious)
  • 1 egg beaten

Mixing and baking your oat and honey cookies

First off, start by preheating your oven to 180C or 360F so that your oven can get nice and hot before you need to bake your cookies.

Mix all of your dry ingredients in a small bowl. In a second medium-sized bowl, mix all of your wet ingredients.

Carefully add your dry ingredients to your medium bowl with your wet ingredients and mix well.

Get a baking tray and line it with a non-stick baking mat to bake your cookies on.

You can use two spoons to shape little balls of dough. But if you prefer, you can also use your hands to shape the balls. Although I recommend you keep your hands wet to prevent sticking. Or you can, of course, just drop them onto your baking sheet. Whatever method you prefer, they taste great no matter what they look like.

Make sure to flatten the cookies a little bit. So that they are about one centimeter or half an inch high and five centimeters or 2 inches wide. Then bake in the oven for 15 to 18 minutes or until set and golden brown.

Once the cookies are done baking, you can leave them to cool. Then store them in a nice tin and enjoy them with a nice cuppa tea.
