The Best Pork Chop Marinade {for Grilling} Recipe (2024)

This is hands-down the Best Pork Chop Marinade out there! These grilled pork chops always turn out juicy with this marinade recipe. And the best part about this marinade is that it calls for ingredients you probably have in your pantry right now.

The Best Pork Chop Marinade {for Grilling} Recipe (1)

I love grilled pork chops, especially if they are juicy and flavorful. This Pork Chop Marinade for Grilling will give you both.

My mom has been using this recipe as her pork chop marinade for years (she found it in the newspaper many years ago) and it’s been my go-to pork chop marinade ever since she gave it to me.

Pork chops sometimes cook up dry, but this marinade makes the pork so juicy and full of perfectly-balanced flavor. It’s fail-proof!

This recipe also works great with chicken. Either protein is delicious.

To make this simple pork chop marinade you will need:

  • Soy Sauce (This is the secret ingredient that makes it so juicy! It doesn’t taste Asian-flavored at all)
  • Chili Sauce (you can find this by the ketchup at the grocery store)
  • Honey
  • Vegetable Oil
  • Green Onions
  • Curry Powder

Substitute ingredients

If you don’t have chili sauce, feel free to use some sriracha (it will definitely add a kick!) or even a Thai chili sauce.

If you don’t have curry powder, try this homemade curry powder recipe: 1/2 teaspoon tumeric, 1 teaspoon cumin, 1/2 teaspoon ground coriander, and 1/2 teaspoon chili powder.

Mix all seasonings together and keep in an air-tight container, using what you need for the recipe.

How to cook pork chops in the oven

If you don’t have a grill,f or it’s the middle of winter and you don’t feel like firing up the grill, have no fear! You can bake these pork chops in your oven. Here’s how:

  • Preheat oven to 375 degrees F.
  • Spray a 9 x 13 inch baking pan with non-stick cooking spray. Place pork chops inside pan (after they are finished marinating) and pour marinade on top of chops.
  • Cook uncovered for 25-35 minutes (depending on thickness of chops) or until internal temperature reaches 145 degrees F.

How long can you keep marinated pork in the fridge:

The key to these juicy pork chops is letting them marinade for 6-8 hours. Sometimes I even let them marinate overnight.

I wouldn’t recommend marinating these pork chops much longer than 12 hours. The main ingredient – soy sauce – is very acidic and will break down the pork chops, making them mushy and not an edible texture.

If you do want to make these pork chops in advance, I would recommend placing the pork chops and marinade in a resealable gallon-sized freezer bag and keeping them in the freezer.

They will keep in your freezer for up to 30 days.

When you are ready to grill them, remove them from the freezer 12-24 hours in advance and place them in the fridge to thaw.

How to make the best pork chop marinade:

In a gallon sized resealable bag, add the soy sauce, chili sauce, honey, vegetable oil, green onions, and curry powder. MIx until completely combined. (It’s convenient to use your hands by squishing the ingredients around in the bag until all combined.)

Add in the pork chops, then seal up the bag. Place in the fridge for at least 2 hours. We recommend at least 6-8 hours to get the most flavor. You could even let them marinate overnight.

Remove bag from the fridge, place pork chops on grill over medium heat and discard marinade.

Grill for 6 to 8 minutes on each side or until the insides of the pork chops are no longer pink.

My husband and I made this a couple of weeks ago, and we fell in love with the flavors. It's a great marinade. We didn't have regular chili sauce, so I used 2 tablespoons of sriracha (a smaller amount so that we didn't overwhelm our tastebuds). We grilled the porkchops and served with roasted sweet potatoes and broccoli. We liked the meal so much, we're having it again tonight. Thanks for a great recipe!

  8. L MacDonald says:

These look wonderful and the recipe seems simple enough - I hope to try this soon. The only thing I don't quite understand is why the last ingredient is written as "boneless skinless pork chops" - I've NEVER seen a pork chop with any skin on, ever. What would that look like?

  9. Marcia says:

Could these be baked in the oven? I don't own a grill?

  10. Becky says:

What could you substitute instead of curry powder?

  46. John says:

Hi,This recipe looks delicious and I can't wait to try it!But one thing which confuses me is the term green onion, which here in Australia we call a spring onion I think? What part of the bunch do you use, just the green ends or the whole stem from green to white ends?Cheers,John

  47. Momma Cyd says:

In most recipes that you will be using or cooking green onions, you'll use the white and the pale green portion of the onion that's just above the root. But the darker green leaves are a delicious garnish for everything from soups to casseroles without any cooking needed.

  48. Jane says:

This recipe sounds pretty good....I'm thinking of pre-planning a bit for Father's Day grilling and this sounds easy enough to do. I do have one question though - what would you suggest using instead of the curry? That is one flavor I have never liked. Would thyme or something work just as well maybe?

  49. Momma Cyd says:

You can leave it out or add a spice that you like that will go well with pork. We also like smoked paprika.

  50. Vincent says:

Thank goodness - a marinade recipe without brown sugar!
